BILLIE’S TOMATO/CUCUMBER SALAD
Vegetables:
- Tomato
- Cucumber
- Pepper
- Sweet onion
Dressing:
- less than 1 teaspoon sugar
- 1/4 teaspoon salt
- 3 tablespoons olive oil
- 3 tablespoons vinegar (I usually use raspberry or balsamic)
- Dried, chopped basil (I never measure this, I just pour it on until it looks like enough – probably at least 2 tablespoons)
Mix together. Tastes best if it rests for 20 minutes before eating. This allows the salt and sugar to draw out juice from the vegetables.
