

Use regular size pie pan. Cover bottom with chopped or baby spinach. Sprinkle with diced onion and crumbled feta cheese.
Mix 4 or 5 eggs with 1/4 cup of half-and-half, a pinch of salt, pepper and paprika. Pour over spinach in pie pan.
Bake at 300 degrees for 10-15 minutes until top begins to set. Then place slices of Roma tomatoes on surface. Turn heat up to 400 degrees. Bake until a knife inserted 2 inches from edge comes out clean. Serve with a small dollop of pesto on top of each piece.
