

Preheat oven to 400 degrees Fahrenheit.
Mix together the grated potatoes, salt, pepper, garlic, thyme, vinegar, egg and 2 tablespoons of the olive oil and pat into a 9-inch pie pan or 9-by-13 dish. Bake 30 minutes.
Arrange over top of baked potato mixture. Cook another 15-20 minutes. Cool for 5 minutes, then serve.
