Easy Creamy Potato Salad

This is an old family recipe - you can use low/no fat Miracle Whip

    6 eggs
    6 large potatoes
    1 stalk celery
    1 cup Miracle Whip
    1 cup green tomato relish
    1 tablespoon mustard
    1 teaspoon sugar
    1 dash salt

Hard-boil the eggs. Wash potatoes but don't peel, boil until just tender (still a bit hard so the
pieces don't get "mushy.") Cool eggs and potatoes.

Peel potatoes (if desired) by scraping with a knife. Peel eggs and wash. Remove yolks.
Place yolks in a large bowl. Mash with fork. Add Miracle Whip, mustard, relish, sugar and
salt. Mix well.

Chop or dice potatoes, egg whites and celery; add to relish mixture. Stir well. Best if it sits
overnight.
