Garlic & Savoy Cabbage

According to Dr. James Weil, rubbing salt on your hands after handling
garlic will help remove the smell.

    3 tbsp. olive oil
    1 tsp. curry powder
    1 tbsp. black mustard seeds
1 medium savoy cabbage, finely shredded
    3 garlic cloves, finely chopped
    2 tbsp. desiccated coconut
    1 tbsp. maple syrup
    2 tbsp. lemon juice
    Salt and pepper to taste

Heat the oil in a large skillet or wok. Add the spices and stir-fry until the mustard seeds
begin to pop. Add the cabbage and the garlic and stir-fry until the cabbage begins to wilt.
Add the coconut and stir-fry for one minute more, then add the maple syrup and lemon
juice. Mix well and season with salt and pepper. Serve hot.
