Peas with Bacon Pieces

    ¾ cup chopped lean bacon
    1¼ punds fresh peas
    2/3 cup vegetable stock
    Arugula, finely chopped
    Black pepper

In a skillet, sauté the bacon until golden. Drain away the fat and set aside. In a food
processor, blend the peas with the vegetable stock. Transfer the pea mixture to the skillet
and heat. Mix the bacon pieces with the pea mixture. Transfer to a serving dish. Sprinkle
with the arugula and pepper.
