Scandinavian Beet Burgers

    3 cups white rice, well cooked
    4 oz. firm grated
    2 medium beets, grated
    2 tbsp. bread crumbs
    1 tbsp. balsamic vinegar
    1 tbsp. olive oil
    1 tbsp. marjoram
    Salt and pepper to taste
    Flour for dipping
    Oil for frying

Mix the rice, tofu, beets, bread crumbs, vinegar, oil and marjoram in a bowl. Season and
shape into flat cakes. Dip in flour and fry at high temperature for two minutes on each side.
Turn down the heat and continue frying for about 5 minutes on each side. Serve in burger
buns, with salad, slices of tomato, cucumber, raw onion, mustard and tomato ketchup.
